Gelatin is an irreversibly hydrolyzed form of collagen. It is a mixture of proteins and peptides produced by partial hydrolysis of collagen. It can be extracted from the bones, connective tissues and skin of animals such as domesticated pigs, fish, cattle, and chicken. Gelatin contains 98-99% protein. Amino acids present in gelatin are like glycine, alanine, arginine, aspartic acid, proline, hydroxyproline, etc.
